Es gibt in vielen Kulturen Beispiele für fermentierte Lebensmittel: Sojasoße, Tofu, Sake, Kimchi, Oliven oder Borschtsch. Als Bezug zur Hyperkulturalität wird die faszinierende Kulturtechnik des Fermentierens wegen der Haltbarkeit der Lebensmittel, dem gesundheitlichen Nutzen und der Verfeinerung des Geschmacks eine weltweite Bedeutung zu geschrieben.
